There's a bar in Sant Just with four decades of history where you can try a delicious truffle omelet with cheese. Also burgers, pintxos, or cod. Or another with a fried egg on top
They are all culinary creations, authentic delicacies, and works by Aitor Pallarés, the son of the owner of La Nata, a bar that opened in 1981 and was previously a haberdashery, as he himself explains. Aitor is also the 'tortilla maker' of the establishment, as shown by a fun, large sign on the door, which faithfully depicts the figures of the aforementioned tortilla maker and his sister, the 'croquette maker' Judith Mas.

La Nata also makes some very special croquettes. They are "100% homemade croquettes, with traditional flavors or other very original ones," you can read on one of the promotional cards available at the bar. If nothing else, they are as original as the omelets, if not more so. There are McDonald's hamburger croquettes, chicken, or beef, "one of the most eye-catching and most requested by customers," the siblings point out.
Every day they make different ones, both croquettes and omelettes, with very diverse ingredients. "The one they ask for the most is the classic with onion, although the truffle with brie or the smash burger, an omelette with a burger inside, accompanied by caramelized onion, are also successful," explains Aitor.
Once in the business
"We started making the croquetes four years ago and the tortillas two years ago," explains the tortilla maker. "This was a normal, old-fashioned bar, my mother's and before that my grandmother's, and we decided to give the business a twist," continues the tortilla expert, who states that the idea has had an "impact" on the neighborhood, not only in Sant Just but also in Esplugues, Sant Feliu, Sant Joan, and other metropolitan towns. "Now, with the tortillas and croquettes, the place is fuller than before," confirms the cook, who admits they use social media to reach beyond the town and a bit further.
Although the establishment is small, an outdoor terrace helps accommodate more customers, like a worker from a well-known company in the area who didn't hesitate for a moment to try the tortilla pintxo upon seeing it.
